  • 1 to 1½ cups ice cubes

  • 1 teaspoon lime juice for brightness

Method
 

  1. Prepare the ingredients by cutting fresh pineapple into small chunks if using fresh fruit.
  2. Add coconut milk, lime juice, and vanilla extract into the blender first.
  3. Add pineapple chunks next, followed by ice cubes on top.
  4. Blend on high speed until smooth, creamy, and slightly frothy.
  5. Taste and adjust sweetness or thickness by adding more pineapple, ice, or a touch of sweetener if needed.
  6. Pour immediately into chilled glasses.
  7. Garnish with pineapple wedge and mint leaves.
  8. Serve fresh and enjoy immediately for best texture and flavor.

Notes

Use frozen pineapple for a thicker, slushier consistency.
Light coconut milk keeps it low-calorie while still creamy.
For a dessert-style drink, add more coconut milk and reduce ice.
For extra freshness, always serve immediately after blending.
