Ingredients
  

For the Meatloaf
  • 2 lbs ground beef 80/20 recommended
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 medium onion finely chopped
  • 2 –3 garlic cloves minced
  • ½ cup milk
  • ½ cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
For the Glaze
  • ½ cup ketchup
  • 2 –3 tbsp brown sugar
  • 1 tbsp mustard

Equipment

  • Large mixing bowl
  • Baking sheet or loaf pan
  • Parchment paper or aluminum foil
  • Measuring cups and spoons
  • Small mixing bowl (for glaze)
  • Spatula or hands for mixing
  • Meat thermometer

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, milk, ketchup, Worcestershire sauce, salt, and pepper. Mix gently until just combined—do not overmix.
  3. Shape mixture into a loaf on the baking sheet or press into a loaf pan.
  4. Mix glaze ingredients in a small bowl until smooth. Spread half over the meatloaf.
  5. Bake for 45 minutes.
  6. Remove, apply remaining glaze, and bake for another 15–20 minutes until internal temperature reaches 160°F (71°C).
  7. Let rest for 10 minutes before slicing and serving.

Notes

Use 80/20 ground beef for best moisture and flavor.
Do not overmix or the meatloaf may become dense.
Letting it rest before slicing is essential for clean cuts.
Glaze can be adjusted for sweetness or tanginess based on preference.
For extra moisture, you can add a splash more milk or grated onion.
