Ingredients
  

  • 2 cups rolled oats
  • 1 cup mixed nuts almonds, peanuts, walnuts, or cashews, chopped
  • ½ cup seeds pumpkin seeds, sunflower seeds, or chia seeds
  • ¾ cup dried fruits cranberries, raisins, chopped dates, or apricots
  • ½ cup honey or maple syrup for vegan option
  • ½ cup peanut butter or almond butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips optional
  • ¼ cup coconut flakes optional
  • 1 scoop protein powder optional

Equipment

  • Mixing bowl (large)
  • Small saucepan

  • Baking pan (8x8 inch recommended)

Method
 

  1. Preheat oven to 350°F (175°C) if baking. Line a baking pan with parchment paper.
  2. Spread oats and chopped nuts on a baking sheet and toast for 8–10 minutes. Allow to cool slightly.
  3. In a saucepan over low heat, combine honey and peanut butter. Stir until smooth, then remove from heat and add vanilla extract and salt.
  4. In a large bowl, mix toasted oats, nuts, seeds, and dried fruits.
  5. Pour the warm mixture over the dry ingredients and mix thoroughly until well combined.
  6. Transfer mixture into the prepared pan and press firmly and evenly.
  7. Add chocolate chips on top if using and gently press them in.
  8. For no-bake: Refrigerate for at least 2 hours until firm.
  9. For baked: Bake at 325°F (160°C) for 15–18 minutes until lightly golden, then cool completely.
  10. Remove from pan, slice into bars, and serve.

Notes

Press the mixture firmly into the pan to ensure the bars hold together well.
Adjust sweetness by reducing honey or using naturally sweet dried fruits.
Store in an airtight container for up to 1 week in the refrigerator or freeze for up to 3 months.
Easily customizable with your favorite mix-ins like chocolate, coconut, or spices such as cinnamon.
