- Preheat oven to 180°C (350°F) and line a baking tray or lightly grease a loaf pan.
- In a large bowl, combine garlic, onion, parsley, parmesan cheese, breadcrumbs, Italian seasoning, salt, and pepper.
- Add eggs and milk, mixing until the ingredients are well combined.
- Add the ground chicken and gently mix until just combined. Do not overmix to maintain a tender texture.
- Transfer the mixture to your prepared tray or pan and shape into a compact, even loaf.
- In a small bowl, mix melted butter, garlic, and parmesan cheese, then brush evenly over the meatloaf.
- Bake for 40–50 minutes or until the internal temperature reaches 75°C (165°F) and the top is golden brown.
- Remove from oven and let rest for 5–10 minutes before slicing and serving.
Notes
For extra moisture, use slightly higher-fat ground chicken or add a bit more milk.
