Ingredients
  

Main Ingredients:
  • 500 g–700g ground chicken
  • 4 –6 cloves garlic minced
  • ½ –¾ cup grated parmesan cheese
  • ½ cup breadcrumbs
  • 1 –2 large eggs
  • ¼ cup milk
Flavor Additions:
  • 2 –3 tablespoons fresh parsley chopped
  • 1 small onion finely chopped or grated
  • 1 –2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
Optional Garlic Parmesan Glaze:
  • 2 tablespoons butter melted
  • 1 –2 cloves garlic minced
  • 2 tablespoons grated parmesan cheese

Equipment

Method
 

  1. Preheat oven to 180°C (350°F) and line a baking tray or lightly grease a loaf pan.
  2. In a large bowl, combine garlic, onion, parsley, parmesan cheese, breadcrumbs, Italian seasoning, salt, and pepper.
  3. Add eggs and milk, mixing until the ingredients are well combined.
  4. Add the ground chicken and gently mix until just combined. Do not overmix to maintain a tender texture.
  5. Transfer the mixture to your prepared tray or pan and shape into a compact, even loaf.
  6. In a small bowl, mix melted butter, garlic, and parmesan cheese, then brush evenly over the meatloaf.
  7. Bake for 40–50 minutes or until the internal temperature reaches 75°C (165°F) and the top is golden brown.
  8. Remove from oven and let rest for 5–10 minutes before slicing and serving.

Notes

For extra moisture, use slightly higher-fat ground chicken or add a bit more milk.
Avoid overmixing to keep the meatloaf soft and tender.
Letting the meatloaf rest before slicing helps it hold its shape better.
You can substitute breadcrumbs with oats, crushed crackers, or almond flour for different textures or dietary needs.
Add a cheesy center with mozzarella for a stuffed variation.
