- Preheat oven to 375°F (190°C) and prepare a baking dish with light grease or parchment paper.
- In a large bowl, combine breadcrumbs and milk. Let sit for 2–3 minutes to soften.
- Add garlic, onion, parsley, Italian seasoning, salt, pepper, and optional garlic powder. Mix well.
- Add ground chicken, eggs, and parmesan cheese. If using mozzarella, add it here. Mix gently until just combined.
- Transfer mixture to the prepared baking dish and shape into a loaf. Keep thickness even for uniform cooking.
- Optionally sprinkle extra parmesan on top for a golden crust.
- Bake for 45–55 minutes or until internal temperature reaches 165°F (74°C).
- Optional: Brush olive oil on top halfway through baking for added moisture and browning.
- Remove from oven and let rest for 8–10 minutes before slicing and serving.
Notes
For extra moisture, avoid using ultra-lean ground chicken.
Freshly grated parmesan provides the best flavor and texture.
Do not overmix the meat mixture to prevent a dense meatloaf.
