Ingredients
  

  • 1 ½ to 2 pounds ground chicken
  • 4 –6 cloves garlic minced
  • ¾ to 1 cup freshly grated parmesan cheese
  • ¾ cup breadcrumbs plain or Italian-style
  • 2 large eggs
  • ¼ cup milk
  • 1 small onion finely diced or grated
  • 2 –3 tablespoons fresh parsley chopped
  • 1 –2 teaspoons Italian seasoning
  • Salt and black pepper to taste
  • ½ teaspoon garlic powder optional
  • ½ cup shredded mozzarella cheese optional
  • 1 –2 tablespoons olive oil

Method
 

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with light grease or parchment paper.
  2. In a large bowl, combine breadcrumbs and milk. Let sit for 2–3 minutes to soften.
  3. Add garlic, onion, parsley, Italian seasoning, salt, pepper, and optional garlic powder. Mix well.
  4. Add ground chicken, eggs, and parmesan cheese. If using mozzarella, add it here. Mix gently until just combined.
  5. Transfer mixture to the prepared baking dish and shape into a loaf. Keep thickness even for uniform cooking.
  6. Optionally sprinkle extra parmesan on top for a golden crust.
  7. Bake for 45–55 minutes or until internal temperature reaches 165°F (74°C).
  8. Optional: Brush olive oil on top halfway through baking for added moisture and browning.
  9. Remove from oven and let rest for 8–10 minutes before slicing and serving.

Notes

For extra moisture, avoid using ultra-lean ground chicken.
Freshly grated parmesan provides the best flavor and texture.
Do not overmix the meat mixture to prevent a dense meatloaf.
Letting the meatloaf rest after baking helps retain juices and makes slicing easier.
