Ingredients
  

Bread
  • 1 loaf soft white sandwich bread or whole wheat/brioche as preferred
Spreads
  • 200 g cream cheese plain or herbed
  • 2 –3 tablespoons mayonnaise
  • 2 tablespoons unsalted butter softened
Fillings
  • 1 cucumber thinly sliced and patted dry
  • 150 g smoked salmon
  • 4 boiled eggs for egg salad
  • 1 cup cooked shredded chicken (for chicken salad)
  • 2 tablespoons chopped celery optional, for chicken salad
Flavor Enhancers
  • 1 tablespoon fresh dill or chives finely chopped
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
Optional Additions
  • Lettuce leaves
  • Thinly sliced radishes

Method
 

Prepare Fillings
  1. Mash boiled eggs with mayonnaise, mustard, salt, and pepper to make egg salad.
  2. Mix shredded chicken with mayonnaise, celery, and seasoning for chicken salad.
  3. Soften cream cheese and mix with herbs and lemon juice if desired.
Prepare Bread
  1. Trim crusts from all slices of bread for a clean, soft finish.
Spread Base Layer
  1. Evenly spread butter, cream cheese, or mayonnaise on each slice to prevent dryness.
Assemble Sandwiches
  1. Add fillings evenly: cucumber slices, smoked salmon, egg salad, or chicken salad.
  2. Top with another slice of bread and press gently.
Cut into Shapes
  1. Slice into triangles, rectangles (finger sandwiches), or circles using a cutter.
Chill and Serve
  1. Chill for 20–30 minutes for best texture.
  2. Arrange on a platter and garnish before serving.
