- In a medium saucepan over medium heat, combine water, butter, sugar, and salt. Bring to a gentle boil while stirring occasionally.
- Add the flour all at once and stir vigorously until the mixture forms a thick dough and pulls away from the sides of the pan.
- Remove from heat and allow the dough to cool for about 5 minutes.
- Add the egg and vanilla extract, then mix until the dough becomes smooth and glossy.
- Transfer the dough into a piping bag fitted with a star tip. Pipe small bite-sized portions onto a lined tray or directly into the air fryer basket.
- Preheat the air fryer to 375°F (190°C) and lightly grease the basket.
- Arrange the churro bites in a single layer, leaving space between each piece. Lightly spray with oil.
- Air fry for 8–10 minutes or until golden brown and crispy.
- In a separate bowl, mix sugar and cinnamon. Toss the warm churro bites in the mixture until evenly coated.
- Serve immediately with your favorite dipping sauce.
